Last winter we were happy to finally offer a cake decorating class, and now Sheen Bergeron is coming back to LeRoux for this special class that concentrates on the holidays. Sheen is a graduate of the New England Culinary Institute with a degree in Baking and Pastry, and has been decorating cakes at European Bakery for 3 years. This is a hands-on class that will cover decorations appropriate for the fall holidays, but then heavily concentrate on the Christmas classic, Bûche de Noel. Sheen will demonstrate how to make the whipped cream for the filling and then show students how to roll the cake into its log shape. However, some of the hard work will be done for you. Each student will receive a pre-rolled, but naked, yule log for cutting, frosting and decorating (and of course to take home with them!). A decorating comb (perfect for scoring the bark on the cake), is included in the price of the class.
