Shun (Shoon) knives are part of a long tradition of Japanese blade making. Kai, the maker of our Shun Classic knives has been making blades for more than 100 years in Seki City, the heart of Japanese cutlery since the 13th Century. Zen philosophy holds that “shun” is the precise moment during the year when any particular food is at the peak of perfection, in harmony with the natural rhythms of the season. With this in mind, each Shun knife requires 100 hand-crafted steps to complete.

What we love about these Japanese knives is that they bring together this ancient tradition with state-of-the-art technology and premium materials. The core of the blade is VG-10 super steel clad on both sides resulting in 34 layers of Damascus steel, ground to an ultra-sharp 16 degree angle. The resulting blade exhibits a beautiful wood grain pattern allowing it to slice easily through whatever cooking job you’re tackling. The D-shaped ebony Pakkawood handle makes the Shun a comfortable knife to hold by allowing it to fit naturally into the palm of your hand. Shun offers a wide assortment of blade shapes, so we can always find the right knife for the task at hand.
