Shun Kanso Cutlery
Kanso means simplicity. The design of these knives is just that: simple and basic but without sacrificing the superb cutting ability that Japanese knives are prized for. Shun has eliminated anything non-essential, and what remains is a knife that is the go-to knife in our kitchen block. The blade is AUS10A high-carbon, vanadium stainless Japanese steel, which results in a razor-sharp blade that that holds its 16-degree edge. The Heritage matte finish has a rustic look that hides scratches and improves with age, perfect for more aggressive knife users. The knife handle, made from Tagayasan or wenge, is known in Japan as “iron sword wood”, and contributes to the rustic look of the knife. Don’t let the rustic appearance of this knife fool you; the contour of the handle enables an easy chef’s pinch grip and the full-tang construction provides balance and easy control.
We love the beauty in the simplicity of these Kanso knives. They’re like the perfect pair of jeans: they feel great and prove their worth on a daily basis. When customers ask us about choosing the best knife, we always tell them the best is what feels good in your hand. We feel confident in recommending the Kanso knives in their beautiful simplicity, and their ability to do the job just as beautifully.
