The blade is AUS10A high-carbon, vanadium stainless Japanese steel, which results in a razor-sharp blade that that holds its 16-degree edge. The Heritage matte finish has a rustic look that hides scratches and improves with age, perfect for more aggressive knife users. The knife handle, made from Tagayasan or wenge, is known in Japan as “iron sword wood”, and contributes to the rustic look of the knife. Don’t let the rustic appearance of this knife fool you; the contour of the handle enables an easy chef’s pinch grip and the full-tang construction provides balance and easy control.
