With a combination of technology and craftsmanship, we love what Staub enameled cast iron brings to the cooktop and the table. Francis Staub began designing cookware in 1974 and created enameled cast iron cookware that excels at enhancing meals. Still made in France, the black matte interior is infused with quartz for better browning and searing and the self- basting lid is perfect for braising slow-cooked one pot meals. Thanks to the superior heat retention of cast iron, the Staub interior has a durable non-stick surface that efficiently sears and gently browns, a great start to any braising recipe. The spikes on the interior of the lid aid in basting; as condensation forms on the interior of the cover and drops down, yielding intense flavor. Staub is an essential line of cookware for braising, roasting, and baking and is as artisanal as it is committed to attention to culinary detail. The ceramic finish on Staub is rich and looks lovely on the stove or on the table.

Coq au Vin is one of our very favorite dishes, and this is absolutely our favorite vessel to cook it in. With its shiny rooster handle, Staub designed their oven in honor of this traditional French dish that features succulent chicken, earthy mushrooms, smoky bacon and delicate pearl onions, all simmered in chicken broth and a good red wine. However, this oven is not just a one-dish wonder. It’s oval shape is perfect for roasting a nice chicken with some carrots and onions thrown in. If you’re looking for a good pot to make Julia’s Boeuf Bourguignon, or even to cook a pot roast, this enamel coated cast iron oven is ideal for braising any kind of meat or vegetables. It’s generous 5.75 Qt. capacity along with the tight fitting cast iron lid complete with basting spikes keep the flavor in the food and help you up your braising game. Viva la France!
