For natives of the Southwest, the sound of crackling chiles roasting by the side of the road is a welcome vision every fall. Hatch green chiles are prized for their uniquely delicious flavor and relatively moderate heat levels. They can only be grown in Southern New Mexico's Hatch Valley, where the dry climate, high altitude and rich soil work together to produce this wonderful chile pepper. They're typically roasted in huge barrels until the skins blister and can be removed to reveal a perfectly roasted flesh. Zia Hatch Chiles are roasted, peeled and diced and ready to be added to any dish. We love it in the classic green posole of the region, as well as added to scrambled eggs, baked into bread, or plopped on a cheeseburger.
