Henckels uses a proprietary formula of high-carbon no-stain stainless steel for the perfect blend of sharpness and durability.The knives also go through an ice-hardening process, called Friodur, giving these knives lasting sharpness and resilience against dulling.
We’ve loved the Rocking Santoku design since it first came to market. The elegant design is a hybrid of Asian Santoku and Western Chef’s knife styles. The blade curves up slightly at the tip, allowing for a Western rocking chop motion, and turns flat towards the bolster for Asian style chopping (think Nakiris and Santokus). A curved bolster encourages a professional pinch grip, for improved control, safety, and decreased hand fatigue.The blade and handle are well balanced, and with the comfortable pinch grip, this knife feels like an extension of your hand.
