We field a lot of questions from customers looking for a healthy alternative to industrial coated non-stick cookware. We suggest our favorite alternative, Mineral B Carbon steel cookware.  Carbon steel performs similarly to cast iron cookware but is lighter weight and has a smooth cooking surface, making it easier to use. Carbon steel pans heat up quickly and are very responsive to temperature adjustments.  There’s no better pan to sear a steak or make the perfect crispy-edged sunny side up egg. Carbon steel pans can go directly from burner to oven or broiler. Unlike most nonstick pans, you can use metal utensils without damaging this natural nonstick coating.

When you first start using the pan don’t be concerned with the aesthetics. With the first few uses the pan’s finish will look mottled, splotchy and irregular.  Don’t try to scrub it off; the pan’s change in color is the initial development of the natural nonstick coating. The more you use the pan the quicker it forms a natural nonstick coating.  In fact, the non-stick performance of the pan improves with each use. The more your pan is used, the more it blackens and the less it sticks. Now you’re on your way to creating the best nonstick pan you’ll ever own.  Over time the pan’s patina will tell your story.

Before first use

-DeBuyer Mineral B Carbon Steel pans are finished with beeswax to protect them from oxidation during their shipping and their storage. This beeswax also facilitates the seasoning, improving the pan’s non-stick properties. Before first use clean pan with very hot water to soften the beeswax and wipe with a towel to remove excess beeswax. A thin layer of beeswax will remain and provide a base for seasoning. To season the pan, pour enough unflavored oil into your iron pan to cover the bottom. Carefully heat oil over medium heat. Once the oil slightly steams, dispose of the oil and wipe the pan with a paper towel. Repeat the process several times.

Cleaning after use

-To clean pan after use, deglaze warm pan with hot water and wipe with a sponge, rinse with warm water, wipe dry and oil lightly, store in dry place. Never soak pan to clean, if food particles stick to pan use hot water and a scrubby sponge or chain mail scrubber to remove food particles. Never clean with detergents, the use of detergents will remove the natural non-stick coating. Never put into a dishwasher, pan is not dishwasher safe, the dishwasher will remove the seasoning and pan may rust.
