We love fresh pasta, in large part because it takes us back to eating in Italy. Eating a bowl of handmade noodles in a trattoria, slick with the proprietary sauce of the region, at a table set with a hunk of Parmigiano-Reggiano and a bottle of house wine is perhaps the most delightful sensory memory we can conjure. Now we can recreate that scene (minus the nonna in the kitchen) by putting our Imperia Pasta Machine to work. Made in Italy, this old-fashioned machine is the same used in kitchens throughout the region, and includes rollers for both solid sheets and two styles of cut noodles. A clamp help to keep the machine in place while rolling out soft sheets of pasta, and the easily removable cutting roller turns those sheets into piles of fresh noodles. Cheaper than a plane ticket, just throw Rocco Granata on the record player, light some candles, and allora, you’re back in Italia.
