Trebbiano grapes are crushed and cooked in the ancient “Traditional Style”, cooked in copper over an open wood fire, then aged in old wooden barrels of chestnut, oak, mulberry and ash.

Our condiment comes to you straight from the birthplace of balsamic vinegar, Modena Italy. Beloved by both customers and staff, this dark balsamic is a perennial favorite.

Aged using the traditional Solera method, the balsamic is moved through a series of progressively smaller wooden barrels. Over time, it naturally evaporates and thickens, developing the velvety texture and the rich, luscious flavor that makes this condiment a true gem.

Pairs well with: Any of our flavored or unflavored Extra Virgin Olive Oils, or used all on its own.

Tasting notes and serving suggestions: Delicious on its own, drizzled over fresh, garden-ripe tomatoes with a hint of fresh basil and shaved Parmigiano-Reggiano cheese. It also makes an excellent dressing when paired with any of our olive oils, but the Lemon and Blood Orange Olive Oils are particularly suited to complementing this rich balsamic. Not only used in salads, it adds depth of flavor to pasta sauce, beef stew, vegetable soup, even chili. Use it to macerate your favorite berries before spooning over ice cream. Our aged balsamic is a pantry must-have.
